Major Food Group and MGM Resorts International have premiered CARBONE RIVIERA at Bellagio, transforming one of the Las Vegas Strip’s most hallowed dining spaces into a high-stakes, seafood-focused iteration of the celebrated CARBONE concept. Positioned in the former home of the iconic Picasso restaurant, the launch represents a calculated and ambitious move by both hospitality giants to redefine luxury coastal Italian dining within the desert’s most competitive culinary landscape. The debut signals a deeper commitment between Major Food Group (MFG) co-founders Mario Carbone, Jeff Zalaznick, and Rich Torrisi, and MGM Resorts, building on a decade of successful collaboration that has seen MFG establish a formidable presence across MGM properties.

The restaurant is framed as the realization of a long-held dream for MFG, intending to become one of the premier fish restaurants globally. By situating the new venture against the striking backdrop of the Fountains of Bellagio, the project elevates the standard for experiential dining in Las Vegas, blending world-class cuisine with cinematic spectacle. This strategic location and conceptual shift from the original CARBONE’s Italian-American roots to a coastal European focus underscores the restaurant’s claim to be a new chapter in the brand’s evolution.

 

A Refined Coastal Vision in the Desert

CARBONE RIVIERA consciously evokes the glamour of the Italian and French Rivieras during their mid-century golden age. The atmosphere is an intentionally curated blend of historical reverence and contemporary luxury. International designer Martin Brudnizki’s work channels this vision through a sophisticated palette of terracotta, golds, and clay tones, sharply contrasted by the fresh, deep blues associated with the Mediterranean Sea. The 240-seat space moves away from a descriptive or decorative theme toward an interpretive design that uses materials and light to suggest an environment of sun-drenched ease and artistic warmth, a subtle nod to Pablo Picasso’s time in Vallauris.

The meticulous design includes a choreographed arrival sequence that transitions guests from the casino’s energy to the restaurant’s composed allure, moving through a sea-inspired mosaic portal and an abstracted citrus grove. This deliberate progression culminates in an expansive dining room featuring bespoke Murano glass chandeliers and archways, with two terraces opening onto the iconic lake and its fountain show. The design serves not just as a setting but as a fundamental component of the immersive experience, ensuring the visual narrative is as compelling as the culinary one.

 

Elevating the Whole Fish Program

At the core of CARBONE RIVIERA’s culinary thesis is its elevated seafood and whole fish program. Moving beyond the beloved Italian-American staples that defined the original CARBONE, this new concept centers on daily shipments of luxury ingredients from oceans worldwide. The menu is structured around a refined progression, beginning with an array of meticulously executed crudo, such as Nantucket Bay Scallops with shaved white truffles and lightly grilled Chu Toro. This opening act emphasizes the pristine quality of the raw materials, setting a high standard for the courses to follow.

The main event focuses on a nightly selection of whole fish, which may include rare varieties like Sea Bream, Red Snapper, Dover Sole, and Turbot. Preparation methods are presented as a showcase of craft, from grilling over Japanese charcoal to roasting al forno or baking in a salt crust. The presentation is elevated to a ceremonial affair, with debonair service captains performing table-side deboning with the signature flair of Major Food Group’s hospitality model. While the menu is heavily weighted toward seafood, it strategically integrates CARBONE classics like the Spicy Rigatoni Vodka and Caesar alla ZZ, along with a curated selection of steaks from Snake River Farms, ensuring all loyalists and preferences are accommodated.

Over the past decade, MFG, co-founded by Jeff Zalaznick, Mario Carbone, and Rich Torrisi, has not only built a global portfolio of over fifty restaurants, bars, and clubs but has become synonymous with a bold, celebratory, and highly professional approach to luxury dining. This achievement was recently underscored by GQ naming MFG one of the 20 Most Creative Companies in the World. In a move that transcends standard restaurant amenities, CARBONE RIVIERA introduces the Fortuna, Bellagio’s custom 33-foot Riva yacht. Docked on the patio, this limited-edition “Anniversario” yacht is offered to invited guests, providing a truly singular, private vantage point for experiencing the iconic Fountains show. This detail exemplifies the extreme lengths to which the partners have gone to integrate luxury and exclusivity, transforming the dining experience from a simple meal into an access point for the rarest kind of Strip spectacle.

The beverage program mirrors the restaurant’s coastal focus, with an emphasis on Champagne, White Burgundy, and coastal Italian white wines designed to complement the delicate seafood and crudo. The cocktail menu balances perfectly executed classics with new signatures channeling the Italian coast, such as the Pistachio Colada and the Strawberry Pomodoro.
