The seeds of the Rosa rubiginosa, a wild rose species found in the southern Andes, are used to process rosehip seed oil, a type of seed oil. Rosa canina, which grows primarily in South Africa and Europe but also in many other parts of the world, can also be used to extract this oil. The important fatty acids gamma-linolenic acid, palmitic acid, oleic acid, and linoleic acid are all present in this oil along with vitamins A and C. Alpha-linoleic acid and linoleic acid are the building blocks for the fatty acid vitamin F, which is found in abundance in rosehip oil.

Provitamin A is present in the oil (mostly beta-Carotene). It has been falsely claimed to contain retinol, a form of vitamin A that can only be produced by animals using provitamin A. However, it does have quantities (up to 357 mg/L) of tretinoin, also known as all-trans retinoic acid, which retinol transforms to. In a similar vein, vitamin C is a water-soluble vitamin, therefore even though the fruit is abundant in it, the oil does not. [Reference needed The important fatty acids linoleic acid, or omega-6, and -linolenic acid, or omega-3, are abundant in rose hip seed oil. Because of their rich profile of bioactives, particularly antioxidant phenolics, rose hips are exceptional fruits for their historical usage in traditional medicine (Olsson et al., 2005).

High concentrations of polyunsaturated fatty acids can be found in rose hip seed lipids (Szentmihalyi et al., 2002). Due to its usefulness in food, medicine, and cosmetic supplements, rose hips are widely used (Uggla et al., 2003). Particularly rich in proanthocyanidins and vitamin C, the fruits (rose hips) of Rosa canina are employed in a variety of food and pharmaceutical applications (Osmianski et al., 1986). This chapter primarily focuses on the essential oil of R. canina L., a species of rose hip that is extensively spread, as well as the traditional pharmacological and food science uses of rose hips.
